Because there's no money in it. Running in mono reduces mutlipath distortion, and there's no proof that voice-only formats run in stereo have any higher ratings that those that run in mono, just for that reason.

The only thing you'd hear in stereo would be the crowd noise anyhow, and no one listens to a ball game for the crowd noise.
