What world are you living in? Have you ever seen Family Guy? They may not have called it "political correctness" in the 70s, but the whole point of Archie Bunker was to present a character that would shock viewers with the main character's lack of political correctness. And this was in an era when TV shows - and sitcoms in particular - rarely addressed politics, race issues or class issues.
The purpose was to showcase bigotry and narrow-mindedness, and present an opposing viewpoint. Liberal advocacy groups never objected to All in the Family because it was a show with a liberal bias, written and produced by liberals (Norman Lear). They were smart to make Archie a basically lovable guy with a capacity for growth, because nobody would have watched the show if he was merely a mean bigot.
The Bunker character would not be ground-breaking today because viewers see lack of political correctness satirized all over the media - in TV shows and movies, with much less censorship than in the 70s and 80s.
And your mention of The Bob Newhart Show is even harder to understand. That was a very funny, but gentle show that never offended anybody then, and wouldn't offend anybody now. In fact, if the show were done today, they'd probably make Dr. Hartley's patients more confrontational, and with "anger issues" or PTSD. Maybe they'd make Mr. Carlin a Tourette's syndrome sufferer who would spout obscenities and make all the other patients uncomfortable. Oh - they'd bleep the actual words, but it would be clear to viewers what those words were...
