What are the best settings for voice only, music and voice and music only with Adobe Audition 1.5? I choose settings based on a trial basis, and I alternate between the three Vocal presets, depending on the mic I am using.

Tell us what you are trying to accomplish with this tool. Gate? De-ess? Limit? Compress? Expand?
I grew up using tube equipment years ago. When this kind of software was developed they used terms that seemed so logical from the tube equipment days. Attack time. Release time. Look-ahead is a digital world term. Some of these adjustments do not seem to do what my understanding of the terms mean. Including the time I messed with Cool-Edit, I've got close to 15 years of trying to figure out "magic settings" and it's a night-mare for my feeble little brain.
I have v2.0 so I don't know what features may have been added that are not in 1.5.... but spell out what you want this sometime-maddening little tool to do for your voice.
I use Dynamic Processing to do two things for me, and only now and then: gating and de-ess.
Start with the Compander setting and reduce the ratio to 2:1 in the traditional view window.
It's a great starting point.
I also use a customized version of the Soft Knee setting for a little more
punch. The soft knee sounds a bit like a DBX160A.
I have several quality hardware compressors, including
the DBX, but the software in AA is very good for TV/Radio audio and easier for mixes.. Experiment.
I'll use AA's Compander on the overall mix, reducing the comp ratio to 3:1. Or.. I'll use Sony's Wave Hammer. Depends on the machine I'm using. Sometimes instead of the Compander, I'll use the L2 from Waves. All depends on what I'm mixing.
For VO compression... I started with the preset "Gate that Compressor"...under Traditional... reduce the ratio to 3:1 and the output to 14 or so.. as long as it's not over modulating. Be sure you change Band Limiting.... Lo Cut: 20 Hz and High Cut: 20000 Hz
