When did they actually film this past Wednesday night's episode? They make it seem like it's at the end of Hollywood week, but based on the difference in Paula's hairstyle and the absense of the Brittenum twins, I'm assuming it was probably within the past week.

It was at least one month ago. The show doesn't go live every year until they get down to the final 24, and that is the next episode, Tuesday.
 
I believe the episode that aired Wednesday (February 15th) in fact was taped at the end of "Hollywood Week".

It's my understanding that half of the field of 190 or so semifinalists had their second-round auditions on Monday of that week, while the rest got to tour Los Angeles. On Tuesday of that week, it was reversed (with those contestants eliminated on Monday leaving after the Tuesday tour of L.A.).

More singing (individual and in groups of three) and eliminations took place on Wednesday and Thursday.

On Friday, the remaining singers were told their fate. As for Paula Abdul, she might have had her hair done on Friday morning prior to joining the other judges to tell the contestants their fates.

I believe this year's "Hollywood Week" took place in early December. I had heard it had been delayed by a few weeks (it usually has been in mid-November) because it was not certain if Simon Cowell would remain with the show, and the show's producers wanted to get him signed to a new contract. Once Simon signed on the dotted line, "Hollywood Week" finally took place.
