I'm looking into buying a two or three channel mixer so I can have two or three microphones for remote broadcasts.

I'm pretty sure you can control the volume of the mics hooked in to the mixer with the mixer control, but my main questions are:

1. How well would the mixer setup work with programs like Audacity?

2. If I plug two 1/8 mono mics into the mixer with two 1/4 adapters, would both mics come up as mono or stereo when you record?
 
Unless it has USB audio interface built in, no. Also better to lose the Audacity, it is buggy and inefficient workflow.

I have lost Audacity somewhat...I'm now using Hi-Q Recorder for my mic work and Audacity to edit the sound files that come from it. That seems to be working with the audio setup built in to my laptop (Acer Aspire One 722 with Conexant HD Audio Card).

All I need now is about 50 or 60 bucks to get a mixer somewhere...
 
As far as the mixer goes, I have a Gemini, STAY AWAY from them!!! I had my mixer for about 5 years, already the Toggle switches are going. And what is ridiculous, the part only costs $7.00, but to repair it, over a hundred.So go with either a Numark or Pioneer. Since you are not going to be doing any DJ work, go with a 2 channel.
 
And in consoles, you get what you pay for. Even Numark and Pioneers aren't immune to less than ideal build. My console I use for home production is an old UK made Chilton 12 input, which cost a considerable sum of money when new. It was an ex BBC Outside Broadcast Van unit.
