Dehydrator theory of operation..?

Does anyone know of any web pages or documents that explain the theory of operation of automatic dehydrators..? I understand how the ones that heat the desiccant to regenerate it work; what I wanted to know about is the ones that use the compress/vent method with no heat. Thanks.
