Does streaming in mono save on your use of upstream bandwidth?
 
Bandwidth depends on your bitrate. If you're replacing a 128kbps/44kHz stereo signal with 64kbps/44kHz mono you cut your bandwidth in half. And, except for being mono, the latter sounds the same.
 
Using AAC+ saves bandwidth if your clients can support it. Now with iTunes/iPhones in the loop they can play back these streams as well. Just don't use parametric stereo since the support is limited to AAC+V1 (SBR only).
