HOT FUDGE SUNDAE CAKE (a.k.a. "Chocolate Lava Cake", "Cocoa Upside-Down Cake", etc.)
--- STAGE I ---
2 c. all purpose flour [1]
1 1/2 c. granulated white sugar
1/4 c. unsweetened cocoa powder
4 t. baking powder
1/2 t. salt (NaCl)
Heat oven to 350deg. F. Mix all the above ingredients together in large mixing bowl until fully combined (tip: use your hands to mix it. It works better that way, at least for me.)
--- STAGE II ---
1 c. 1% milk
1/4 c. vegetable oil
2 t. pure vanilla extract
Add these ingredients to the dry ingredient mixture, then mix with a whisk until smooth. Pour the resulting batter into UNGREASED 9.5" * 13.5" * 2" baking pan and spread around until evenly distributed. Lick the bowl and the rubber scraper clean! This stuff's completely safe to eat in its primitive state, since it isn't made with eggs!
--- STAGE III ---
2 c. packed brown sugar
1/2 c. cocoa
3 1/2 c. very hot tap water [2]
Mix the brown sugar and cocoa together in another mixing bowl until all clumps are gone and the mixture resembles fine crumbs, then spread evenly over batter. (Again, use your hands to mix them together.) Pour water over the entire preparation, then bake for 40 minutes [3]. If prepared successfully, the cake will be on the top with a rich, soupy cocoa sauce underneath. Serve warm with vanilla ice cream or flooded with milk. It keeps for about five days under refrigeration (32-40deg. F.); reheat for 2-4 minutes depending on amount desired. Looks and tastes just like the stuff served at buffets and restaurants the world over, only much fresher.
[1] Do not use self-rising flour in this preparation.
[2] If you use a cold-tap water filter, microwave at full-power for about 8-10 minutes (don't let it boil.)
[3] Be sure to put a sheet of tinfoil or a cookie sheet larger than the baking dish underneath it, since this stuff can (and does) have tendency to boil over, and it's a royal mess to clean up out of the bottom of the oven.
