Thats's it? Two channels? Or did they get several affiliates of both networks?

That's it -- just those two. Especially so now that the local Radio-Canada transmitter has gone dark.

Don't know if the area was wired for cable yet, and if so, what channels they got at the time.

Corner Brook: 5 CBC, 10 NBC (there was a West Coast regional newscast weeknights 6:15-6:30)

Right, but my question was whether it was on CBC or NBC / NTV, and if it was the latter, if the opt-out pre-empted the second half of "The Flintstones".

The West Coast regional opt-out was on NBC/NTV, CBC had a separate full local news service in Corner Brook in those days (their CBC calls were CBYT). NBC/NTV didn't run early evening news on weekends.
