SCA use and it's affect on coverage/power output

Insignificant. If you run 10% SCA injection, you can up your total modulation to 105%. That will leave 95% modulation for your primary signal. Test this theory in advance by reducing your primary modulation for 100% to 95%. You'll never hear the difference and that is exactly what your primary signal will be like after you add the SCA. There's no significant downside to your proposal. Transmitter output power will not be impacted either way.

The only potential downside is slightly increased multipath. This only applies if your signal is subject to multipath now.
Since the 57kHz subcarrier is locked to your stereo pilot, the increase in multipath would be very minor.

Oh yes, we're subject to multipath. Badly. We have a very strong station 1 step down from us running IBOC in the adjacent market that has no trouble coming in here, on top of that our tower is quite aways outside the city.
