What are some of the classic long-term relationships that may or may not have ended up happily ever after?

Two that immediately come to mind are Jeannie finally marrying Major Nelson on I Dream Of Jeannie and Tony Micelli not marrying Angela on Who's The Boss.

Did Marlo Thomas' character ever marry her boyfriend Donald Hollinger on That Girl?

No - they left it as Ann and Donald being engaged.

And there's always Miss Kitty and Marshall Matt Dillon on "Gunsmoke". No payoff for the audience there.

In the first episode of Mayberry RFD, Andy (Griffith) Taylor married Helen Crump. He would make four other appearances on the show, one of them being in the second year season premiere when he and Helen return to Mayberry with their new baby--Opie was nowhere to be found.

There was Family Matters, where Steve Urkel for years incessantly chased after his long-time crush, Laura Winslow. In the show's final season, they dated on and off a bit, and with one of the final episodes having both Steve and his alter-ego (and later clone) Stefan Urquelle proposing to Laura. Laura accepted Steve's proposal, but the series ended before they could walk the aisle.

And when the Return To Mayberry reunion movie aired in 1986, Andy's son by Helen is never mentioned but a great thing happened in the movie and that is that Barney finally married Thelma Lou.
