Recipe for Pork Chops Jardinier:
4 Pork Chops
Dash of Pepper
Lima Beans (fresh or frozen, but the equivalent of a box of fresh frozen)
1/2 C fresh chopped tomatoes
Cream of Mushroom, as follows:
Chop some regular white mushrooms - about a pound
Add 2 TBSP minced shallots
2 C heavy cream
1-1/2 C chicken stock
1 tsp corn starch dissolved in a TBSP of water
1 tsp thyme (if fresh, chop it and add another tsp or so)
1 TBSP butter (salted or unsalted, but if you want salt later you can add it if you use unsalted)
Another dash of pepper
Lightly saute shallots in butter and add mushrooms and thyme. Add cream and chicken stock, then cornstarch mixture a little at a time, stirring constantly for about 15 minutes. If you want, add a little bit of a bay leaf.
In lieu of the above, you can use a can of cream of mushroom soup.
Continuing with the Pork Chops Jardiniere:
Brown Pork Chops, pour off fat and add your cream of mushroom mixture (whatever way you decide to make the sauce or soup), as well as about 1/8 C of water (or for a little added flavor, 1/8 C white cooking wine) and some pepper. Cover and simmer for half an hour - LOW HEAT THANK YOU. Add lima beans and tomatoes and bake for 20-30 minutes.
What a delightful little dinner you will have with a small salad appetizer and a glass of beaujolais, sauvignon blanc or chardonnay
