Soft pillows, good friends, and anything home-baked by Silkie would be about two-thirds correct during these heavy, humid, dog days of summer.
Recipe: Fast and Easy Banana Creme Pie
Ingredients: 1 Shortbread Pie Crust
2 bananas
1/2 Pint of heavy cream
1 small box vanilla pudding (that does not require cooking)
1/8 tsp pure vanilla extract
1 TBSP granulated fructose
Preparation Directions:
Place a [preferably] medium stainless steel mixing bowl in the refrigerator to chill
Slice bananas and place evenly in the bottom of the pie crust shell
Prepare vanilla pudding according to directions on the box and pour over bananas
Place filled pie shell in fridge, covered (usually the plastic that is in the crust when you buy it doubles as a lid once washed).
Top with whipped cream, which is made according to the recipe below mixer notes.
Note: You will require use of your electric mixer for the pudding. Be sure to wash the beaters and chill before proceeding to next step.
Whipped Cream:
Remove chilled mixing bowl from fridge
Pour heavy whipping cream into the bowl
Add 1/8 tsp. vanilla
Using electric mixer on whip setting, whip cream, gradually adding fructose (or sugar) to taste while maintaining whipping until mixture is creamy like the whipped topping you buy in the store, but this is better. Be sure to taste from time to time while mixing, as heavy cream is naturally somewhat sweet.
Remove banana and pudding filled crust from fridge. With a chilled frosting knife or rubber spatula, spread whipped cream evenly on top. Since you will have plenty of whipped cream there is no need to skimp.
Cover your banana creme pie and return finished pie to the fridge for awhile. Remove mixing beaters from the mixer, place them in the empty mixing bowl and give them to whoever was standing over your shoulder while you prepared the whipped cream. Since you will be busy putting your pie in the fridge the beaters and bowl will probably be gone by the time you turn around anyway.
