PANCAKES

Proceed to cafeteria/dining hall and acquire from Bev the following ingredients:
2 cups Bisquick
2 eggs
1 cup 1% milk
Ingredients of type and amount specified in applicable line of "VARIATIONS" section below (if desired)
Acquire from kitchen or HESD* the following supplies:
1-cup measuring device
Plastic pitcher with beak
Fork or small wire whisk
Plastic spatula (do not use metal spatula with nonstick cooking surfaces)
Rubber scraper
Dinner knife or flatedge
Teflon-coated (or other non-stick) electric griddle
Heat-resistant plastic bench scraper
Measuring devices appropriate for desired variation
Acquire from kitchen or HESD the following additional supplies ONLY if using alternate recipe:
3/4-cup measuring device
1-tablespoon measuring device (2 required)

1 egg
1 cup all-purpose flour (do not use whole-wheat, gluten-free or self-rising flour)
3/4 cup milk
2 tablespoons vegetable oil (do not use margarine or butter)
1 tablespoon sugar (do not use artificial sweeteners or sugar substitutes)
1 tablespoon baking powder
1/2 teaspoon salt
=== ASSEMBLY PROCEDURE ===
0. Wash hands thoroughly and clean and sanitise all tools and work surfaces prior to and following use. Read, understand and follow all instructions and safety rules in recipe and on equipment prior to and during preparation process.
1. Proceed to room 220 and set up the electric gridle on the working counter below the vent hood. Set griddle thermostat to 350 degrees F.
2. Measure out two cups of Bisquick, one cup of milk and the two eggs into the plastic pitcher.
If bisquick is not available, use alternate ingredients list above, adding ingredients to pitcher in order shown.
3. Mix all ingredients with fork or wire whisk until all blended. Prepared batter MUST be smooth with no visible lumps.
4. When griddle is hot, pour batter DIRECTLY onto nonstick griddle surface until about 4-5" in diametre. DO NOT APPLY MARGARINE, BUTTER, OIL OR ANY OTHER FAT TO GRIDDLE SURFACE. The texture and apperance of the pancakes will be significantly degraded if fat is applied directly to griddle.
5. Flip pancakes when edges are dry and bubbles no longer burst. Pancakes are ready when surfaces of both sides are smooth and have a uniform medium-brown colour. Pancakes with white patches must be discarded.
6. Remove from griddle and arrange on serving platter.
7. Prepare griddle for next batch by using the "boil-off" method and scrape released residue into grease trap using heat-resistant plastic bench scraper (do not use metal bench scraper with nonstick cooking surfaces) or unplug and let cool before washing.
=== VARIATIONS ===
BANANA
Puree one ripe banana until smooth and no lumps remain, then fold into prepared batter until thoroughly mixed.
BLUEBERRY
Fold 1/2 cup frozen thawed blueberries into prepared batter until evenly distributed.
CHOCOLATE (SIMPLE)
Stir one envelope hot chocolate powder into prepared batter until thoroughly mixed. Batter will have a noticeable brown colour.
CHOCOLATE (ADVANCED)
Stir one envelope hot chocolate powder and 1/2 cup Hershey's chocolate syrup into prepared batter until thoroughly mixed. Batter will have a noticeable brown colour.
CHOCOLATE (DIABETIC COMA INDUCING)
Stir one envelope hot chocolate powder, 1/2 cup Hershey's chocolate syrup and 1 cup of semisweet chocolate chips into prepared batter until evenly distributed. Batter will have a noticeable dark brown colour.
RAISIN BRAN
Place 3/4 cup of raisin bran flake cereal into plastic bag and crush with hands or pinroller until flakes are reduced to medium-coarse crumbs. Fold into prepared batter until thoroughly mixed. Batter will have a whitish colour with brown flecks and raisins throughout.
SPICE
Stir 1 teaspoon each of cinnamon, nutmeg and allspice to prepared batter until thoroughly mixed. Batter will have a slightly-brownish colour.
STRAWBERRY
Fold 3/4 cup frozen thawed strawberries or strawberry bar mix into prepared batter until evenly distributed. Batter will have an even reddish-pink colour.
VANILLA
Stir 1 to 1 1/2 tablespoon pure vanilla extract into prepared batter until thoroughly mixed. Batter will have a noticeable brown colour.
